Orange WedgesFrom Sara Moulton and Gourmet Magazine 1997 What to Pack the Kids for Lunch, Making Meals Healthy and Fun Gourmet Magazine's Sara Moulton has a terrific new lunch box idea. This is a very visual and delicious dessert. Cut oranges in half lengthwise and remove all of the pulp. In a small saucepan combine 1/4 cup fresh juice and 1 1/2 teaspoons unflavored gelatin. Let the mixture stand for five minutes. Cook the mixture over low heat, stirring constantly for 3 to 4 minutes or until all the gelatin granules are completed dissolved. Whisk the gelatin mixture into the remaining 1 cup fresh orange juice. Pour the mixture into the hollowed shells and chill them. Cover for four hours, or until the mixture is jelled. Cut each half into three wedges. Finished jiggly orange wedges.
